The Rosarium to open this May in Waterloo
The venue, which has 96 covers, will have a ‘quintessentially’ English garden that will serve lunch and dinner, as well as an afternoon tea experience
The Rosarium has revealed it will be opening in Waterloo this May, following the opening of the launchpad permanent venue, Labyrinth.
Executive chef Harvey Ayliffe will be overseeing the restaurant’s offering, which will be “elevated British dishes with an added Wonderland twist”.
The venue, which has 96 covers, will have a “quintessentially” English garden that will serve lunch and dinner, as well as an afternoon tea experience.
Faber, who designed The Rosarium’s interiors, drew inspiration from the architecture of Lewis Carroll’s English gardens where “opulence and the surreal blends to create a magical effect”.
The all-day menu begins with grazing dishes and elevated simple starters, with highlights including woodland mushroom soup with truffled straws and scampi scotch egg with asparagus soldiers.
Diners can also choose from a variety of main dishes, such as fish and chips, the decadent ale-braised beef mac with Montgomery cheddar, or for those looking for plant-based, lentil and caramelised shallot pie.
Harvey Ayliffe, executive chef of The Rosarium, said: “Having been lucky enough to have worked at some of London’s best restaurants, I wanted my next adventure to capture some of the fun, skill and playfulness of all that London has to offer, taking from its past as well as its fiction for something truly magical.
“The aim is to bring out the inner child in all that dine with us and inject some magic into every bite.”
