Tom Brown at The Capital opens in Knightsbridge

Michelin-starred chef Tom Brown has officially opened the doors to his new flagship restaurant, Tom Brown at The Capital, in Knightsbridge.
Marking a return to The Capital Hotel, where he first made a name for himself as head chef at Outlaw’s, the 28-cover restaurant will champion Brown’s signature style of “flavour-led” dishes with a “strong emphasis” on seafood.
Sustainability is at the core of the restaurant’s philosophy, with Brown dedicated to using responsibly sourced seafood and finding ways to minimise waste by using every part of the fish, from underused cuts to developing unexpected pairings.
Starting at £125 for 12-courses, the restaurant offers tasting menus, that begins with mussel, port, and beetroot, charcuterie with an oyster, followed by dishes such as wild bass with buttermilk and vanilla, tuna with soy and quail egg, and the cuttlefish “ravioli” crafted entirely from fish.

Guests can choose from a three, six or eight-course menu during lunch, with 10-courses for dinner. The restaurant will serve dinner from Tuesday to Saturday and lunch from Tuesday to Sunday.
