Bistrot Pierre founder kicks off construction at new Eastbourne restaurant

The founder of Bistrot Pierre has visited the site of the chain’s new Eastbourne restaurant to signal the start of construction work.

The opening of the new restaurant in 2019 on the Wish Tower site will represent the chain’s furthest step into the south east to date. Founder, Robert Beacham said he “could not ask for a better location than the Wish Tower” in Eastbourne and that he had ambitions to open a restaurant in the UK’s sunniest town for some time.

Beacham said: “The prospect of opening a restaurant on what is undoubtedly one of the most stunning locations on the south coast is incredibly exciting. Eastbourne is thriving, the town centre shopping and lifestyle offer is being transformed and the redevelopment of the Devonshire Quarter is spectacular.

The restaurant designs were created by award winning architects Levitt Bernstein in conjunction with Gillespie Yunnie Architects. The angular architecture is inspired by “the town’s inextricable relationship with sea and passing vessels cutting through local waters”.

Councillor David Tutt, leader of Eastbourne Borough Council, said: “I am quietly confident that when Bistro Pierre opens next year it will quickly become one of their most popular UK destinations. The Gallic cooking influences, fresh fish dishes, great value and breathtaking sea views are a recipe for success anywhere in the world.

“Knowing how popular the restaurant will be my only concern is being able to make a reservation.”
