Simon Cope resigns as Byron CEO

Simon Cope has resigned from his position as the CEO of embattled burger restaurant chain Byron amid the company’s restructuring plan under a CVA.

His termination document appeared on Companies House on 3 December, stating he resigned on 30 November, just 18 months after joining from Wagamama, initially as Byron’s managing director.

Cope is the latest in a line of executives to depart the restaurant chain in the last 12 months; in April marketing director Paul Coppin resigned and later in August, Nick Young stepped down from his role as chief operating officer after a year.

Coppin is to be replaced by Steve de Polo who was appointed to the marketing director role on 3 December according to documents on Companies House. Cope oversaw the closure of 23 Byron sites as part of its CVA which was agreed in January, leaving 55 restaurants in its portfolio.
