Carlo Scotto’s Amethyst to open in Mayfair this May
The restaurant's 12-course tasting menu features creative flavour combinations, influenced by Nordic and Japanese cuisine, with French and Arabic influences.
Carlo Scotto, previously head chef of Xier in Marylebone, has announced his new restaurant Amethyst will open this May on Mayfair’s Sackville Street.
Spread over two floors, and at just 36-covers, the restaurant will offer an “intimate gastronomic” experience with interiors incorporating raw materials, concrete and wood to create a “neutral canvas”.
According to Amethyst, the ground floor features just one table – a real amethyst and quartz bespoke centrepiece seating 20 diners in full view of the pass. The irregular shaped table has been designed to ensure that each party enjoys their “own intimate space whilst providing an interactive dining experience”.
The restaurant’s 12-course tasting menu features creative flavour combinations, influenced by Nordic and Japanese cuisine, with French and Arabic influences.
Whilst the menu will change regularly, based on seasonality, diners can expect the likes of Burnt Hay Croquette; Yuba Tartelette with Caviar and Scallops; Salmon and Foie Gras; Caramel Miso Black Cod and Naganegi Dashi; and Ras El Hanout Beef, Apple and Date.
Amethyst added, on the lower ground floor, the ‘Wine Cellar’ will showcase Amethyst’s “extensive” collection of fine vintages whilst offering a six-course tasting menu option in addition to the 12-courses.
Scotto said: “It’s been a tough couple of years, but I am delighted to finally be behind the stoves again and in my own restaurant. It’s a dream to have been able to create the perfect canvas for my cooking and I can’t wait to welcome diners to Amethyst.”
