Meatliquor welcomes Sam and Alicja Bryant as head of food

Scott Collins, co-founder of Meatliquor, has announced the appointments of Sam and Alicja Bryant as head of food, set to “inject” fresh ideas into the brand, with their new experimental menu.
Sam and Alicja began their career at The Princess of Shoreditch and later opened Coal Rooms with a menu based on cooking over wood and charcoal.
According to the brand, in 2018 Sam and Alicja created Whole Beast, a nose-to-tail concept that gained a “cult following”, cooking at Meatopia and Carousel and later began working with Meatliquor during lockdown, reopening the restaurant for takeaway.
Following Sam and Alicja’s success of their coronation chicken with Whole Beast, they will offer a coronation fried chicken burger as an ode to their previous work.
The restaurant also said joining the menu will be the duo’s southern fried chicken drumsticks with buffalo gravy and mash, the garlic mushroom burger and the filled it with fish, with panko breaded fish fillets and homemade tartare sauce.
Sam Bryant said: “As long-term fans of Scott and Meatliquor, we’re so excited to officially announce our roles.”
Collins added: “We’ve spent the last joyous 18 months subtly tweaking every current dish on the menu. That’s been a brilliant exercise but now we’re really going to have some fun.”
