One Devonshire Gardens restaurant appoints new head chef

Drawing on his Mediterranean heritage, Martin Thliveros prioritises the use of fresh, seasonal ingredients, a principle that forms the foundation of his cooking philosophy

One Devonshire Gardens by Hotel du Vin, in Glasgow’s West End, has announced the return of Martin Thliveros as its new head chef. 

Thliveros joins the One Devonshire Gardens team with a vision to further enhance The Restaurant’s commitment to using the “highest quality” of local produce. 

 Drawing on his Mediterranean heritage, he prioritises the use of fresh, seasonal ingredients, a principle which the hotel said forms the foundation of his cooking philosophy. He will incorporate this approach to highlight the “best” of Scottish cuisine at One Devonshire Gardens.

Since joining the team, he has already introduced a new tasting menu, reflecting his belief in personalisation and providing a “one-of-a-kind experience” for every guest. This menu allows guests to curate their own five-course tasting menu from the à la carte selection. Wine flights can be added to complement each course, featuring selections from the hotel’s cellar.

Regarding his appointment, Thliveros said: “Returning to One Devonshire Gardens feels like coming home and it’s a privilege to now lead the kitchen in one of Glasgow’s most prestigious establishments. I’m excited about bringing a fresh perspective to our menu and building on the hotel’s renowned reputation for excellence. 

“My goal is to create bespoke dining experiences for our guests which highlights the best of Scottish produce. When I dine out, I often struggle to decide what to choose from the menu and I always want to try a few different dishes. That’s why we’ve launched a new tasting menu that gives our guests the freedom to curate their own dining journey by selecting five courses from our à la carte menu. I’m thrilled about introducing this personal touch, ensuring every occasion is both special and unique.”
