Clapperton joins Coast as head chef

Fred Clapperton has announced he will take over as head chef of seafront restaurant Coast this coming March.

The Saundersfoot site is owned by The Seren Collection, which operates a series of luxury sea-front venues across south west Wales.

Clapperton first began in hospitality as a pot washer at a young age. He later ran the kitchen of his local village pub, before joining the kitchen team of 2-AA Rosette Bibury Court Hotel. 

In 2012, he moved to Michelin-starred Surrey restaurant Drakes, and became head chef of the site after it’s rebrand to The Clock House. He won his first Michelin star after a year as head chef there. 

Managing director of The Seren Collection, Neil Kedward, said: “Fred is the perfect fit for us for many reasons but his cooking style is what really stood out for us. His creative modern approach and lightness of touch fits our aspirations for Coast Restaurant.  

“He is a confident and intelligent young chef who clearly knows his own mind and cooking style and we can’t wait to welcome him to Pembrokeshire. It’s a very exciting new chapter for Coast.”

Clapperton said: “I am thrilled to be joining the Seren Collection, and heading up Coast. It is a stunning and inspiring location and I look forward to being a part of its evolution as we drive to create a memorable experience to accompany the location.”

His appointment follows news that the site has further planned investment for a “thoughtful refurbishment” led by UK designer Martin Hulbert.
