Cornish Bakery appoints new food innovation head amid record sales

Managing director Mat Finch stated that the appointment reflects the company's long-term ambition to enhance its menu and position the brand as ‘the new coffee shop’

Cornish Bakery has appointed chef and product developer Arnaud Kaziewicz as its head of proposition and product innovation, following a record trading period over the Easter and May Bank Holiday weekends.

The appointment comes as the bakery chain reported a 9% increase in like-for-like sales since the start of 2025. 

The newly created role is part of a broader strategy to strengthen the brand’s food offer and customer experience across its expanding estate.

Kaziewicz, who has held senior food development roles at Eat and Red Engine, operators of Flight Club and Electric Shuffle, will lead Cornish Bakery’s product team in developing new ranges and refining its existing selection of baked goods. 

He is also known for reaching the finals of MasterChef: The Professionals in 2016.

In his new role, Kaziewicz will oversee the rollout of new product launches throughout 2025, with several new locations also planned.
