Spanish chef Albert Adrià is set to open his first project in London with Cakes and Bubbles, a cake shop and wine bar.

Cakes and Bubbles will open inside the Hotel Cafe Royal on Regent Street after the chef ran a pop-up at the hotel for 50 days.

The Spanish chef is best known for his notoriously difficult to get into Tickets restaurant in Barcelona and three-Michelin star Catalan restaurant El Bulli. Dishes such as Tickets’ white chocolate cheesecake will be carried over to Cakes and Bubbles.

Adrià was once given the title of “best pastry chef in the world” and will serve some of the his iconic cakes such as classic Spanish cheesecake, dark caramel flan and airwaffles with caramelised banana.

Two members of the chef’s core team will travel to the restaurant permanently, including David Gil who was given the accolade of ‘Best Chocolatier’ in Spain.

Cakes and Bubbles is expected to open this November.
