The Felin Fach Griffin appoints Nick Brodie as head chef
Nick Brodie has been appointed head chef at The Felin Fach Griffin in Brecon.
Brodie joins the pub with rooms from Llangoed Hall, where he held the title of head chef and won three AA Rosettes since 2013.
He has also worked at The Queensberry, Bath and The Bath Priory, prior to his new position at the pub with rooms.
The Felin Fach Griffin was first run by brothers Charles and Edmund Inkin in 2000, and now the seven-bedroom property is part of EatDrinkSleep Inns.
Commenting on his appointment, Brodie said: “I’m absolutely thrilled to have the chance to work at one of the original pubs that do great food.
“It’s a different environment to the one I’ve operated in for the last six years, but I just love that challenge of bringing all my experience together to cook good simple food with great ingredients. I can’t wait to get into the kitchen.”
Inkin added: “We couldn’t be more pleased to welcome Nick to take over this totemic role in our little enterprise. His experience is broad and his skillset and knowledge are as good as it gets in this industry.
“We feel he is just the right person to cook food which hits the mark in what is, after all, just a little pub in the middle of the Welsh mountains.”
