Chotto Matte expands into Marylebone

Group executive chef Jordan Sclare has designed the menu, with new dishes exclusively available in Marylebone

Soho restaurant, Chotto Matte, has announced it is set to open its newest site in London at Marylebone Village. 

The news comes alongside the announcement that it is set to set up flagships in cities across the US such as San Francisco, Nashville, and Los Angeles. These will join its current sites including the Soho flagship, alongside Miami and Toronto. 

The new site will be designed by architect and long standing brand partner

Andy Martin Architecture (AMA). The Marylebone site will feature natural lava stone surrounding the restaurant and an “artistic structure”. All key designs will be inspired by Tokyo’s contemporary urban culture.

Chotto Matte’s founder, Kurt Zdesar, said: “We are delighted to continue our expansion plans for Chotto Matte. We cannot wait for the new phase of growth to allow more people to experience the very best of authentic innovative Nikkei cuisine in stylish architectural spaces across the globe.

Trained and inspired by Sclare, Begonya Sanchez, has been appointed as head chef at the new site. 

She added: “I am so excited to bring the Chotto Matte experience to Marylebone and showcase my potential as their head chef. We are introducing a collection of brand new premium dishes for the launch, combining the essence of Chotto Matte with an elevated dining experience.” 

The Marylebone menu will include a range of new dishes, drawing on classic Japanese themes. Additions include fatty tuna (O-Toro) and robatayaki salmon.
