Chef Brian Grigor and sommelier Glen Montgomery have announced the launch of Eòrna, a new Edinburgh restaurant at the cityās Hamilton Place in Stockbridge this spring.
Both Grigor and Montgomery are known for having a āwealthā of expertise gained from working in some of Scotlandās āfinestā restaurants, including the two-Michelin-star Restaurant Andrew Fairlie with chef Michel Roux Jr.
Grigor also retained the Michelin star at Edinburghās Number One for four years.
The pair will manage every part of the restaurant together and they wonāt be hiring any chefs or waiters.
The focus of the restaurant is a 12-cover countertop āchefās tableā overlooking the kitchen, with Grigor and Montgomery cooking and hosting.
Diners will be served using the ābestā Scottish seasonal ingredients and classic old-world wines.
Eòrnaās sample menu includes mull cheddar mousse, quince and hazelnut, belhaven smoked salmon, lemon puree, quails egg and caviar.
They will also serve hand dived orkney scallop, oyster leaf, burnt apple, loin of roe deer, salt baked celeriac and sauce grand veneur.
The dessert menu features Rhubarb and custard, valrhona dark chocolate tart, milk chocolate cremeaux, and toasted barley ice cream.
