Michelin star chef opens new smash burger venue in Borough

Starting his career at the Michelin starred Elephant Restaurant in Devon, Bailey then honed his skills further at the 2-Michelin star Restaurant Sat Bains

Two-Michelin-starred chef Jordan Bailey, has announced the opening of Heard, a new smash burger restaurant in Borough, London.

After a year of perfecting his recipes and touring some of the biggest UK events in the Heard food truck, Bailey is bringing his concept to a new pop-up restaurant in Borough.

Taking over the former Audrey’s site next to Flat Iron Square, Heard is a 40 cover restaurant serving double patty smash burgers.

Heard is also planning to expand beyond its Borough location, with a new flagship restaurant set to open off Carnaby Street this spring.

At Heard, the meat comes from renowned butcher, H.G. Walters, who has helped the team source regenerative meat from a cooperative of UK farmers that follow strict criteria.

Pickles are all created and stored at the restaurant and Heard’s signature fries use very high premium quality British potato.

Furthermore, the restaurant will have a wine pairing for every burger, designed by sommelier Majken Bech-Bailey.

Bailey said: “We’re proud to work with some of the UK’s best producers who champion ethical farming practices, and a fully transparent supply chain – from farm to table. Our mission for Heard is simple: to create a ridiculously tasty burger, crafted with Michelin-level attention to detail and top-quality ingredients.”

Starting his career at the Michelin starred Elephant Restaurant in Devon, Bailey then honed his skills further at the two-Michelin star Restaurant Sat Bains.

Following this, he worked his way up to become head chef at Oslo’s Maaemo restaurant, where his team were awarded a third Michelin star before he moved to Ireland and opened the Aimsir.
