New British-sourced menus launch at Market Brasserie

The Market Brasserie at IHG’s O2 hotel, led by executive chef Johan Rox, has launched a new menu celebrating the best of British produce.

The restaurant, overlooking London’s River Thames and Canary Wharf district, will serve dishes created from produce sourced from across the British Isles, including salad of smoked duck breast with courgette and carrot spaghetti and herb dressing; beetroot and goats cheese croquettes with tomato and black olive crumble and chocolate tart with almond sponge, fresh raspberries and raspberry sorbet.

Rox said: “We’re delighted to share this new menu with guests as we continue to redefine and enhance our entire restaurant experience here at Market Brasserie. Each of our ingredients shares a story, whether it’s monkfish fillets from the south coast, or aromatic pastries from Greenwich itself, each ingredient has been carefully selected from our trusted suppliers to ensure every dish is of the very highest quality.

“We’re committed to the journey of our ingredients, ensuring that wherever possible they’re British-sourced. This gives our guests the opportunity to learn about the produce, where it’s from and how we carefully prepare each ingredient and use it to create each dish.”
