Rhubarb Hospitality Collection refurbs Fenchurch Restaurant
The nine course menu features dishes of torched jerk salmon with spring onions and yuzu ponzu sauce, sea bass with salt fish, smoked oyster, and Scotch bonnet emulsion
Rhubarb Hospitality Collection (RHC) has announced that it has refurbished its Fenchurch Restaurant, located on the 37th floor of the Sky Garden building.
The interiors have been reimagined to reflect head chef Kerth Gumb’s Caribbean roots and “playful approach” to fine dining.
Alongside tropical-themed accents, pops of colour and botanical lighting, counter dining and a lounge area have been introduced to offer a more casual dining experience.
The refurbishment also marks the arrival of Gumb’s spring tasting menu, inspired by the flavours of his childhood home, the Caribbean island of Anguilla.
The nine course menu features dishes of torched jerk salmon with spring onions and yuzu ponzu sauce, sea bass with salt fish, smoked oyster, and Scotch bonnet emulsion.
PB Jacobse, CEO, Rhubarb Hospitality Collection said: “It’s been a year since we successfully partnered with Kerth and the refurbishment has been informed by his Caribbean roots, ebullient character and informal approach to fine dining. RHC is committed to innovation and the introduction of an accessible counter dining gives our guests more choices.”
Gumb added: “It’s so exciting to see my vision for the restaurant come to life with the support of RHC. We now have a versatile space – diners can pop in for a single dish or a cocktail and a bar snack as well as the fine dining tasting experience. I am committed to evolving the menus further with a spotlight on Caribbean flavours – watch this space for more exciting things to come.”
