In line with company developments, the in-house Handley’s Brasserie’s has also unveiled its new food menu, comprising a variety of unique dishes with a Mediterranean twist.

Managing director of Suites Hotel and Spa, Lyndsay Stanistreet-Tyer, said: “Since the completion of our refurbishment earlier this year, the team and I have been working tirelessly to further add to the hotel’s offering.

“In order to position ourselves as a drinking and dining destination within its own right in the Knowsley area, we have welcomed to the team a duo of industry figures to bring our in-house Handley’s Brasserie and Bollinger Bar firmly up to date and in line with our four-star hotel and spa.”

She added: “Our in-house eateries appeal to both hotel residents and non-residents alike, so as part of our restaurant update, we’ve looked at how to streamline and simplify the process of dining with us.”

Menu highlights include tandoori chicken supreme served with spiced dahl, saffron potatoes, chicken samosa and minted yoghurt, pan-fried red snapper on a bed of rice noodles, stir-fried vegetables, coconut, chilli and coriander broth and cauliflower cheese risotto with charred cauliflower, cauliflower fritter parmesan crisp and curry oil.

Head chef Robbie, has previously worked at the likes of Crown Plaza Liverpool City Centre and West Tower. He said: “Since taking the helm as head of the kitchen here at Suites and Spa, I have enjoyed creating a whole new menu of dishes for our guests to enjoy. Not only does the menu include modern twists on classic customer favourites, we have also introduced a selection of totally new flavours for visitors old and new to enjoy.”

Restaurant manager Adrian added: “As part of my appointment here at the hotel, I have brought with me a wealth of experience from working in venues such as Pioneer Bar and Brasserie, located in Crosby.

“Already, we have welcomed extremely positive feedback from those who have dined with us and sampled our menu’s latest additions and we are looking forward to showcasing what we have to offer to new guests, especially throughout the upcoming festive season.”
