The Old Ship Hotel relaunches as The Wardroom

The Old Ship Hotel in Brighton, part of the Cairn Collection, will relaunch its restaurant with a new look, menu and new name – The Wardroom. The hotel’s bar has also been renamed to The Mess Deck, with a new summer menu.
Officially launching today, The Wardroom have invited 60 guests from within the catering industry to sample the new look menu over the first two weeks.
Paul Wright, general manager at The Old Ship Hotel said: “As we are positioned right by the sea, our new name is much more in keeping with the seaside vibe of the hotel. We’re delighted with the restaurant’s new decor, and our head chef Phil Mesquita has done a great job creating a contemporary, flavoursome and diverse menu which represents what people want to eat now.”
Previously called Steak on Sea, the restaurant has a modern new look and new creative menu inspired by modern British cuisine.
Head chef Phil Mesquita, said: “This relaunch allows us to express our creativity and passion for a great dining experience. Our new name gives us the freedom to experiment with our menu and we can’t wait to open the doors.”
The Wardroom’s new menu includes specialities such as Wood Pigeon, torched Mackerel, Dukkha spiced Halloumi and vegan Kimchi. Many of the ingredients are locally sourced and the menu will change with the seasons.
