Seven Dials Market to welcome new food traders in January

KERB, a hospitality organisation founded in 2012, has announced that Seven Dials Market is parting ways with four of its most lucrative traders in order to provide opportunity for new food talent. Having built credible reputations supported by KERB and its trading opportunities, the four members – Truffle, Club Mexicana, El Pollote and Curry on Naanstop – leave Seven Dials Market by 13 January. Between them, they generate a combined revenue of over £465k each month and now own nine bricks and mortar sites. Truffle’s five sites are located in Soho, Southbank, Stoke Newington, St Christopher’s Place and West Hampstead. Club Mexicana has sites in Soho, Spitalfields and Brixton. El Pollote opened their first site in summer 2023 on Carnaby Street. Truffle, founded by Tom Bickers, began its journey with KERB in 2018, when it joined KERB’s inKERBator programme. The nine week programme involves three weeks face to face study with KERB experts, followed by six weeks trading at a lunchtime KERB market in the city. Truffle began by serving steak and chips with a truffle gravy. The KERB team worked with Truffle to develop a burger offering pre–opening at Seven Dials Market. Since opening in Seven Dials Market in 2019, Truffle has generated over £3.6m in revenue from that location alone. Today, they have five restaurants in London. Bickers said: “The KERB inKERBator programme was integral in Truffle’s success. It was a big leap of faith from KERB to put us on the programme, and cooking truffle burgers in their office in the cold January of 2018 was what started our business. “Seven Dials Market has been the springboard needed for us to continue growing due to a low start up costs and its central London location. Leaving will allow us to focus on our full service restaurants, innovate and develop our menus further and grow the business to its full potential. Innovation is the goal for 2024!” Seven Dials Market opened in 2019 and continues its ambition as an accelerator space to nurture new talent from diverse backgrounds. To date, 111 independent food operators have come through KERB’s inKERBator programme, and 2024 is set to see a further four cohorts graduate. The market will welcome four new independent, owner-operated businesses this January. Lucky’s Hot Chicken joined KERB’s inKERBator in 2017 and have gone on to trade with KERB at markets, events, and most recently, a two year residency in The Understudy at the National Theatre. Los Gordos is a recent graduate of the inKERBator, completing the programme in 2022. Founder Seb impressed the KERB team with his inventive take on Colombian tacos. Motherflipper is one of KERB’s longest standing members. Regulars on the KERB Events circuit, Motherflipper will take over the burger spot from Truffle. Kolkati is another original KERB member. Kolkati began trading at KERB Camden Market, and their Indian kati wraps will soon be a staple at Seven Dials Market.
